Auburn's Hooter prank spurs wing recipes

Who gives a hoot for wings?Well Hooter Gate has come to an end, and no, Auburn is not getting a Hooters Restaurant. Auburn has been in a tizzy all last week over a prank of posting a banner on the old Chevy's building. So why not stir the pot with a copycat Hooter Hot Wings recipe. Also this weekend is the Auburn Home Show at the fairgrounds. I will be hosting the Cooking Stage all weekend in the Sierra Building. Local chefs doing demos and I will also be doing two demos a day. Friday is a food and wine pairing with Bear River Winery at 4 p.m — three wines, three food samples. Saturday will be chefs from Cool Pizza & Grill, Coconuts Fish Grill, farmers' market and North Fork Chai. Sunday, Chef Rachel will be doing two chopped challenges. So much to sample and cooking classes. Hooters Hot WingsIngredients5 pounds chicken wings cut into two pieces, the drumette, and the wing portion2 cups whole wheat flour1 cup all-purpose flour2 1/2 teaspoons salt1 teaspoon paprika1/4 teaspoon cayenne pepperHooters sauce DirectionsIn a large mixing bowl, mix flours, salt, paprika and cayenne pepper together, and blend well. Cut chicken wings into drumettes and flappers. Wash and drain chicken. Coat chicken in flour mixture; refrigerate chicken wings for 90 minutes. When ready to deep fry chicken wings, heat oil to 375 degrees. Place chicken pieces in hot oil, but do not crowd. Fry chicken wings until golden brown. Remove from oil and drain. When all wings have been fried, place in a large bowl. Add hot sauce and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately and with lots of paper towels. Hooters Chicken Wing SauceHooters Chicken Wing sauce is so easy to make. Ingredients1 1/2 cup unsalted butter1/2 cup Tabasco sauce3 tablespoons brown sugar3/4 teaspoon paprika3/4 teaspoon salt1 tablespoon balsamic vinegar3/8 teaspoon cayenne pepper2 tablespoons chili sauce Hooter's Irresistible Daytona WingsBites:2 boneless chicken breasts, cleaned and cut into "bites" (About 1 1/2-inch squares)3/4 cup of flour1 tablespoon paprika1 teaspoon pepper1 teaspoon saltPam olive oil spray Sauce:3/4 cup barbecue sauce (Sweet Baby Ray's original)1/4 cup hot sauce (Frank's Original or Texas Pete's)1/4 cup honey2 tablespoons brown sugar1 tablespoon garlic powder1 tablespoon soy sauceA few sprinkles of crushed red pepper1 teaspoon corn starch (mix this with a few drops of cold water before putting it in the sauce) Directions:Preheat the oven to 375 degrees.Combine the flour, paprika, salt and pepper in a plastic bag. Put the pieces of chicken in the plastic bag and shake to coat.Place the chicken pieces on a foil-lined baking sheet sprayed with olive oil. Bake for 15 minutes or until cooked.While the chicken is in the oven, combine sauce ingredients in a saucepan on the stove. Reduce mixture on medium-low heat for at least 15 minutes.When the chicken is finished cooking, toss it in the sauce.Optional: Throw the sauce coated bites in the oven on low broil for five minutes to give them a nice glaze with the sauce.Wings: Of course you can use this same recipe for wings too! You will definitely want to thrown them on the grill or in the broiler for a few minutes after being coated in the sauce to give them a good glaze Hooters Chili1 pound ground turkey or ground beef1 package chili seasoning mix1/2 medium onion, chopped1/2 medium green pepper, chopped3/4 cup Hooters Wing Sauce1 15-ounce can black beans1 tablespoon mesquite smoke marinade1/2 cup Hooters breading mix1/2 teaspoon black pepper1/2 cup chicken or beef broth1 can chopped green chilies1/4 cup honey1 15-ounce can kidney beans2 tablespoons Hooters Wing Sauce (medium or hot)2 cloves minced garlic1 tablespoon Hooters Hot SauceShredded cheddar cheeseHooters sour cream (which is 1 pint sour cream mixed with 1/4-1/2 cup Hooters Wing Sauce)Heat 2 tablespoons wing sauce in skillet at medium heat and add onion and saute for five minutes. Add green pepper and saute five minutes. Add garlic and saute one minute. Add turkey or beef and brown (about 10 minutes). Add chili seasoning, 3/4 cup wing sauce, kidney beans (drained), black beans (drained), black pepper, chicken or beef broth, green chilies, honey, mesquite smoke marinade, breading mix and hot sauce. Bring to a boil, cover and simmer to desired thickness. Top with cheddar cheese and sour cream. Serve with rice. (If you like it hot, add a diced jalapeno pepper, 1 teaspoon cayenne pepper and more hot sauce.)
