All things cherries: enchiladas, fruit salad and yes, barbecue sauce, too

Well, we made it to Memorial Day weekend, the official kickoff to summer. This week, we have seen the first of the cherries and peaches. This weekend will look a little different than last year. We will be gathering with friends and family, lighting up the BBQ, and if it warms up, maybe play in the pool. Cherry season is my second-favorite season, right behind peaches. This is the time I get my recipes in shape for making all things cherries! All our recipes this week will make your BBQ the talk of the town. I love to start with dessert, and these cherry enchiladas hit it out of the park. The second recipe for fruit salad will have your family talking – fresh fruit, microgreens and cucumbers; oh my! Bring up the behind is Cherry BBQ, with cherries are great prices it is time to can your sauce so you will have it the rest of the year. You can spice it up with some peppers if you like. Cherry Enchiladas Ingredients · ½ cup water· ½ cup butter· ½ cup white sugar (or Splenda)· 5 (10-inch) flour tortillas· 1 (21-ounce) can cherry pie filling (or no sugar added pie filling)· 2 tablespoons white sugar (or Splenda)· ½ teaspoon ground cinnamon· 1 tablespoon crushed sliced almonds Directions Step 1: Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the "enchiladas," making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.Step 2: Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.Step 3: Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving. Cherry Fruit Salad Ingredients · 2 cups watermelon balls · 2 cups fresh sweet cherries, pitted and halved · 1 cup fresh blueberries · 1/2 cup cubed English cucumber · 1/2 cup microgreens or torn mixed salad greens · 1/2 cup crumbled feta cheese · 3 fresh mint leaves, thinly sliced · 1/4 cup honey · 1 tablespoon lemon juice · 1 teaspoon grated lemon zest Directions 1. Combine the first 7 ingredients. In a small bowl, whisk together remaining ingredients. Drizzle over salad; toss. Cherry BBQ Sauce Ingredients · 1 medium onion, chopped · 2 tablespoons butter · 2 garlic cloves, minced · 2 cups fresh or frozen dark sweet cherries, pitted and coarsely chopped · 1 cup ketchup · 2/3 cup packed brown sugar (Splenda brown sugar) · 1/4 cup cider vinegar · 1 tablespoon Worcestershire sauce · 2 teaspoons ground mustard · 1/2 teaspoon pepper · 1/8 teaspoon Liquid Smoke, optional Directions In a large saucepan, sauté onion in butter until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Cook, uncovered, over medium-low heat for 20 minutes or until cherries are tender and sauce is thickened, stirring occasionally.
